Is it possible to have the ability to create sub-folders under Views and Stores to help organise large projects with various profiles? The examples have this in the folder structures - but cannot replicate in Designer.

You can currently organize your classes this way by prepending a package name to the userClassName.
The underlying code will be generated in an appropriate folder, etc. We have not implemented a feature to see them in packages in the Inspector yet. This feature may come in the future.

It's the organisation of the components in designer that I am after - not that concerned with how the generated app folders look like. A true design and generation (CASE) tool should divorce you from having to rely upon looking at the generated code.

+1 on this, Really, Really want to see this in a future release (As soon as possible) I'm not even that concerned with packaging; some form of arbitrary foldering system would do for now.
We are having quite allot of trouble with the sheer volume of views we have, a mechanism to hide/expand groups in the Project inspector would save us allot of time.
I'd like to see this also. This particular issue is one of the reasons we just use Sencha Architect as a layout tool early on in the development process. At some point, we have to abandon the architect, and switch to other IDEs to finish/maintain the code.
This is a serious problem with medium to large projects.
Apart from folding, a search in the project explorer is needed.
