Unanswered: iOS Simulator in ST2
Unanswered: iOS Simulator in ST2
Does ST2 have it's own iOS simulator or do I still need to use XCode for this? I currently use XCode and PhoneGap to be able to use the simulator.

ST2 doesn't and probably won't have it's own iOS simulator. The API docs have one but that's just so it can show examples in the docs.

The iOS Simulator that runs when testing your "packaged app" is Xcode. The one that ships in the docs is just an iframe with a border around it.
