i mean if you use sencha command to build your production version

Ah, I begin to understand

So if I want my application to use the cache, I must do a production build,
but, my application is not yet in production, and my json files ... are all in localhost ...

you can run production build also local.
production build is, manifest file + minified js files ...trainings / workshops / consulting: Sencha Touch / Ext JS
