Same problem here in Mountain Lion 10.7.5.

When I execute these commands (with correct paths set) in the terminal it works in one terminal window.
    export SENCHA_CMD_3_0_0="/Users/you/Path/To/Sencha/Cmd/3.0.0.XXX"
    export PATH=/Users/you/Path/To/Sencha/Cmd/3.0.0.188:$PATH

hey, im having the same problem
i installed sencha but the command is not found, if i export the path it does.

my path looks like this "/usr/bin:/bin:/usr/sbin:/sbin:/usr/local/bin:/opt/X11/bin" no idea if this is good
i reinstalled sencha in my htdocs folder but that didnt work either

i have sencha cmd 3.0.0.250 installed in user/bin and have sencha-touch-2.1.0-gpl in my htdocs

    thanx
