Hi there:

Sencha touch is amazing! But there is one question: can we use it to develop a native IOS App (that is a *.ipa file), is it possible to use Adobe Air together to get things done?

Use the PhoneGap (http://www.phonegap.com/) framework for native apps. See here (http://www.sencha.com/learn/a-sencha-touch-mvc-application-with-phonegap/).
